First Job in Foodservice: Chef Troy’s first job in foodservice was as a prep cook and dishwasher at the Keystore Country Kitchen at age 16.
Early Influences: The turning point in Chef Troy’s life came in the 5th grade when his family became a single working mother household. Young Troy wanted to help his family by starting dinner every day for his mother, older brother and sister. Although he had scholarship offers to run cross country at a number of universities later in life, he always knew that cooking was his true calling, which inspired him to attend the Culinary Institute of America and pursue cooking as a career.
Professional Interests: Chef Troy loves nothing more than crafting French-American classics and delving into the intricacies of home brewing.
Culinary Education: Chef troy graduated from the Culinary Institute of America in 1988.
